This past week was my seven month ketoversary. I didn’t know if this was something I could do long term when I took the leap last June but I knew something had to change.
That’s changed and I know it is the way I will eat for the rest of my life. Keto on!
Progress
It’s been two weeks since my last update and I do have changes to report.
Weight
The scale is down 2 pounds since my last post bringing my total keto weight loss to 27.8 pounds. I’m really looking forward to the next milestone of 30 pounds gone!
Medications
My doctor cut my blood pressure down in half and it hasn’t made any difference in the readings; they’re still normal. I’m hoping next month we might try omitting it completely!
Non Scale Victories
Recently I’ve noticed my clavicles are more prominent; must have lost some fat there! Also, I had to order new slippers because my feet have shrunk and I was tripping trying to keep the older pair on my feet.
Food and Recipes
I did a lot of cooking since there was no business travel and the recipes were mostly from Kristie Sullivan’s cookbooks. My husband wanted meatloaf so I used the recipe in Keto Living Day by Day (KLDBD) and it was a winner. Sorry, no picture!
I made a repeat of pork chop with pan gravy.
To assuage my sweet tooth (which is diminished but not gone with keto) a batch of peanut butter cookies from KLDBY.
Another night we had Kristie’s taco soup. This was really good and I’ll be making it again soon this winter.
I made it with a pan of cornbread using the recipe in the Keto Gatherings cookbook.
Good but two things I’ll do different next time are to add more corn extract and bake it in the right size pan. The recipe called for an 10 inch skillet and I used a 12 inch. I’ve since bought the right size.
I also made Carolyn Ketchum’s taco pie recipe again. This time I used the amount of taco seasoning in the recipe and it’s a bit too much for us so I’ll dial it back next time.
There were a few meals that I didn’t cook. The first was a three meat plate from a local BBQ restaurant.
With the two sides (green beans and caesar salad) I was able to get two meals from it. Another night I had my favorite Carnitas salad from Chipotle.
Saturday I went to breakfast with a local meet-up women’s group. My order was non-traditional breakfast food: bacon, avocado cheeseburger with a side salad. Of course, no bun.
Looking Forward
I am back on the road this week so there won’t be a lot of cooking but I am trying a new recipe tonight. More on that with the next Keto Update.
