Menu Plan Monday: January 28-February 3

For some reason I had a harder time planning our meals this week. I’m getting a delivery of four prepared meals Tuesday and we’ll eat the first one on Wednesday while the others will go in the freezer. You’ll see a couple of them next week.

Last Week’s Recap

Here’s what was planned last week versus what REALLY happened.

Monday: Turkey Sausage and Bean soup with green salad

The soup was delicious and we had leftover soup for lunch several times!

Tuesday: Crock-pot Cajun Chicken with brown rice and green beans

I loved this eMeals recipe and will add it to our regular rotation.

Wednesday: Tortilla Crusted Mahi-Mahi, tater tots and corn

This ended up being leftovers night and we finished off the Tuna Noodle Casserole from the previous Sunday.

Thursday: OPEN

We had tortilla crusted tilapia this night along with the tater tots and veggie.

Friday: Mexican Meatloaf, baked potatoes and green salad

I wasn’t feeling well so we scratched making dinner and picked up a turkey dinner from Boston Market. 

Saturday: Spaghetti with turkey meatballs, green salad

We decided to go out to dinner tonight and I had Mediterranean Sea Bass at Macaroni Grill.

Sunday: OPEN

We had the Mexican meatloaf tonight.  I lost the eMeals recipe so made one up myself. You’ll see it Friday.

This Week’s Meal Plan

Here’s the plan for this week and as always it is subject to change.:)

Monday: Grilled Sirloin Steak with baked potatoes and vegetable

Tuesday: Grilled Cheese and Soup

Wednesday: Mediterranean Pork Chops with ziti pasta and vegetable

Thursday: Costco Roasted Chicken with sides TBD

Friday: Chicken Caesar Salad

Saturday: Tortilla crusted tilapia, fried potatoes and vegetable

Sunday: OPEN
