Thursday was the 8 months anniversary of me starting on the ketogenic diet. I don’t think I’ve ever changed my way of eating for this long before; I don’t see it changing in the future.
Progress
WEIGHT
After a few weeks of no progress I’m happy to report the scale finally moved. I lost 2.2 pounds making my total keto weight loss 30 pounds exactly.
MEASUREMENTS
It was measurements week; I do this every three weeks. I lost 1/2 inch in both thighs and arms and a 1/4 inch in my hips. They keep adding up!
FASTING BLOOD GLUCOSE
I’ve increased the fat in my diet and eating something a little later this past week and it’s paying off in my fasting blood glucose values. I’ve now had four mornings in a row of less than 100 values which never happened previously.
NON SCALE VICTORIES
I had a couple of big ones this week. First, Dr. Westman took me off my blood pressure medicine during my phone appointment early in the week. So far, no changes in my readings.
Then I went shopping in storage where I had a big box of clothes that were too small. These are clothes I haven’t worn in almost four years and most of them are now in the closet to wear. I just have one little box of clothes that need me to lose another 5-10 pounds to fit.
Of course, what’s going in boxes now are all the baggy clothes I’d been wearing. 🙂
New Products
I tried Realgood enchiladas after mixed results with the pizzas. This was good but just isn’t big enough for a meal.
I think it’s a good snack food or for when you might have an enchilada craving.
Recipes
No traveling this week so made a few new to me recipes. The first was a DietDoctor.com recipe (authored by Kristie Sullivan) for a double bacon cheeseburger bake.
It was very rich and I didn’t even put in the full amount of bacon. A little goes a long way (good for me because leftovers!). For Valentine’s Day I made parmesan crusted chicken thighs using a recipe from Keto Living Day by Day cookbook.
We both liked it but again I didn’t put all the parmesan or mayonaise on the thighs as specified in the recipe. For dessert, I made a flourless chocolate cake using a recipe from Cast Iron Keto.
I halved the recipe so we wouldn’t have leftovers forever. We both enjoyed it but it is rich as well.
Lastly, I roasted a whole chicken for what might have been the first time in my life (I just don’t remember ever making this before).
It was cheap enough to make it cheaper than a Costco chicken. Next time, I’m putting butter under the skin to add moisture and flavor to the meat.
Food Log
Dining out this week consisted of ordering one time from DoorDash when I didn’t want to cook.
I had my usual chicken wings and this pizza place has wonderful roasted broccolini with garlic.

Looking Forward
Tuesday starts a fasting challenge (16:8) hosted by Pique Teas. I’m interested in seeing if I can spur some weight loss and maintain steady fasting blood sugars. Keto on!
