Weekly Keto Update #22

It’s been cold in Southern California as you can see in the screen shot above from Friday morning.  My husband’s car stays outdoors and had frost on it!  I’m having a hard time keeping warm at our normal indoor temperatures now that I’ve lost some of my body fat.  I prefer the problem versus gaining fat back!

Progress

Although the scales didn’t move (frustrating).  I did have some positive news this week.

Labwork

Tuesday I had fasting bloodwork and an urinalysis done and the results were pretty good.  My A1C is still in the pre-diabetes range but dropped .2 to 5.9.  The fasting blood sugar was 120 (ugh).  I have a real problem with my liver making glucose overnight.

My HealCare partner suggested eating something with protein and fat before bed and seeing if that impacted my fasting blood sugars.  So far they never exceed 110 so I’ll keep that up and see if it helps.

Non-Scale Victories

Two improvements noted unrelated to the scale happened this week.  First, I went to put on my belt that I have to wear now with some pants due to fat loss and moved to the last notch.

I probably should shop for a new belt now instead of adding more notches.  This one is pretty large.

The second victory had to do with clothes-shopping.  I picked up a pair of Eddie Bauer capris at Costco Saturday in size 14.  Got home and they’re loose so ordered the size 12s online.  Woo hoo!

New Products

I tried one new product this week which was Simple Truth Omelet Bites from Ralph’s.  They were tasty but not very filling.

The entire box is just 180 calories which isn’t enough of a meal for me.  So although they’re tasty I won’t buy this again.

Recipes

Super Bowl kicked off the week and I made two recipes from Kristie Sullivan’s Keto Gatherings cookbook. For our entree we had white chicken chili.

It was so delicious that I was glad I had lots of leftovers to enjoy the next few days!  This recipe will be repeated in the future.  Our dessert was a cookie pizza recipe.

I think it turned out as planned but was a little too sweet for me.  I think I prefer creamier desserts.

Wednesday night we grilled steaks while I roasted Brussels sprouts in the oven.

Friday night I made a repeat recipe of slow cooker pork ribs.

The meat was falling off the bones!

Food Log

I did eat out a couple of times this week but made good choices.  Thursday night was book club at Karl Strauss brewery and restaurant.

I always order the farmhouse burger which comes topped with pork belly and an egg.  I swap out the fries for a vegetable; this time it was green beans.

Saturday night was dinner and movies with girlfriends.  We ate a greek casual eatery where I ordered a Greek salad with a chicken kabob.

It was great and I made two meals from this plate (didn’t eat the pita).  The details of my week are listed in the food log below.

Looking Forward

I’m attending a couple of local Keto gatherings this week and am looking forward to connecting with others on this way of eating.  It should be a stress-free, productive week.  Keto on!
