Menu Plan Monday: February 11-18

If you are one of the people who cook exactly as planned during the start of the week, hats off to you.  I like to start out with a plan understanding it is subject to change.  As a result, there has probably been at least one change every week since I started Menu Plan Monday the beginning of the year.  That’s the fun of life!

Recap

Monday: Jerk Style Chicken with brown rice and corn

Tuesday: Beef Soup (made with beef, stock and onion gravy left over from Sunday)

Wednesday: Chicken Sausage, Beans and Rice

It was a tiring day for me so we split a large burrito from a taco shop.   Not the healthiest but it satisfied the craving.

Thursday: Spaghetti with turkey meatballs, green salad

We forgot the salad (something we’re working on) but added garlic toast.  I love Trader Joe’s turkey meatballs.

Friday: Tilapia with baked potato and green beans

My husband and I had both eaten rather large lunches so I finished my lunch leftovers and he had a can of soup.

Saturday: Leftovers

We had what was planned for Friday (tilapia) except I changed the potatoes to fried instead of baked.

Sunday: OPEN

Instead of going out for my son’s visit, we had a tasty meal at home.  I cooked grass-fed tri-tip (with lots of onions, peppers and spices) and we had that shredded over brown rice with a side of corn.

Meal Plan

This week is going to be very light on menu planning because I’m doing a three day juice cleanse at the end of the week.

Monday: Chicken Tortilla Soup

Tuesday: Costco Roast Chicken, baked potatoes, green beans

Wednesday: Chicken Caesar Salad

Thursday: Valentine’s Dinner Out
