This will be the shortest menu plan yet. I’m still out of town (traveling home today) and haven’t thought about what we’ll be eating this week. Instead, my main concern is getting home in time to prepare and file our tax return!

Monday: Minestrone Soup with bread sticks
The soup was delicious and I ate it Monday night, Tuesday lunch, Wednesday lunch and so on!
Tuesday: Tempeh Meatloaf with fried potatoes and asparagus
I ended up making this on Wednesday night. I was tired and picked up Chinese food at Panda Express. Dinner was tofu eggplant, steamed vegetables and noodles.
Wednesday: Mexi-Bake Casserole, green salad
This recipe will have to wait (maybe this week) as I made the tempeh loaf. It was good but I want to try other vegan “meat”loaf recipes. I roasted asparagus just right for the first time.
