Keto Reboot: Update 2

My keto reboot continues and I’m adapting to a new/old way of eating. I’m going to do these posts every other week so have changed the title to reflect the number of updates versus weeks.

Progress

I lost two pounds since the last update for a total of 7 pounds.  I think it was a little slow due to eating low carb some days versus keto.  This is just until all my non-keto foods that just I eat are gone.  I can’t afford to waste them and am making sure to still have 50 or less grams a day then.

Products

For me the hardest part about the Keto way of eating is doing without bread.There are keto breads for this issue. I even made a loaf of soul bread before (see below).

The Julian Bakery has a keto bread that has very clean ingredients so I bought a package of three loaves.

Although it looks and feels like soul bread the vanilla smell is hard for me to deal with.  They should have put yeast in there for aroma.    I’ll try to eat the loaves because it’s expensive and tastes okay but won’t repurchase in the future.

Food and Recipes

I did a lot of cooking these past couple of weeks including revisiting a few old favorites.  First up was crockpot ribs.

These are very easy to make and something we both like.  I also did Keto Connect’s creamy taco soup.

I suggest putting in half as many tomatoes as the recipe calls which would also lower the carbs.  In the taco theme, I made Carolyn Ketchum’s taco pie.

We also ordered tacos one day from Rubio’s where I went with the cheese shells.

Remember the online cooking class I did recently?  This is a picture of my rolls when they were done.

I used them with the sausage gravy recipe from the Southern Keto cookbook I got for Mother’s day for delicious biscuits and gravy.

We have been eating Dream Dinners entrees 2-3 times a week.  My favorite this week was the greek chicken.  Yummy!

Looking Forward

My first Keto Krate since getting back to this way of eating arrives this week and I’m looking forward to trying new things.  I also am making a strawberry cream pie and have a new recipe for keto beef stew to try.  Yum!

Most of all, I am looking forward to continuing to improve my diet and health.
