Weekly Tales: Fourth of July Edition

By the time this post goes live I’ll be winging my way to Memphis to visit my grandson for his 9th birthday.  It’s a quick trip and I’ll be home by the fourth of July evening.

We don’t do much for the 4th anymore now that we’re empty nesters but I enjoy seeing the local fireworks from our back patio.  It’s important to celebrate the founding of this democracy and then do everything we can to protect it.   This 130 year plus “experiment” might be weakened right now (the majority of American’s thought so in a recent poll conducted by three bipartisan organizations) but it’s still the best system yet.

Highlights

There were several highlights this week.  I kicked off the week by going to tea with my future daughter-in-law and her mom.  It was a lot of fun and I plan a separate post on that.

Midway through the week I had lunch out with a couple of co-workers (one former) celebrating one of their’s birthday.  It was my first restaurant outing eating keto and was a success!  I had a bacon guacamole cheeseburger without the bun and substituted caesar salad (no croutons) for the fries.

My last fun outing was with my husband yesterday to see Jurassic World: Fallen Kingdom.  It was enjoyable but a couple of times the plot was so predictable.

I also cooked a couple of new recipes I found on Diet Doctor.  They were both easy (which I really appreciate) and tasty.  The first was chicken thighs and broccoli cooked in butter.

The next one was a little fancier.  The blue cheese sauce was too thin (next time I’ll use less cream) but other than that the pork and green beans was a hit.

A new to me food find was Zevia ginger ale. I’m trying to stop having sucralose sweetener and only use stevia.

Favorite Reads

It’s time to share a few of my favorite blog reads this past week.

Flyer Talk shares that flight attendants are more likely to get cancer.  This story makes me glad I don’t fly more than once or twice a month.

Should you live your dream life now or later?  That’s the question two money bloggers take on at Rockstar Finance.

Hip2Keto discusses keto diet myths that are false.  I should print this out for friends when they ask about my new way of eating. 🙂

The four monkeys of materialism is a thought-provoking article from Becoming Minimalist.

Female Travel Bloggers posts 15 travel essentials.  I have many and definitely want to get a carabiner for that water bottle.

Looking for a tasty, easy holiday dessert.  This recipe for a keto blueberry cheesecake from I Breathe, I’m Hungry looks awesome and is on my to try list.

Looking Ahead

Besides this four day trip I have book club the day after I get back.  I just finished the book and let’s say it’s not a favorite. Happy Fourth and I hope you have a wonderful holiday!
